Gut Healthy Fudgy Brownies

 
 
 

You know when you throw a whole heap of ingredients together and hope for the best it turns into something wonderful? That is precisely how this recipe was created! I wanted something super healthy that could be eaten on the go for breakfast, and yummy enough that you want to go back for more. These brownies are full of fibre, contain a whole lot of gut-healthy ingredients, like black beans, oats and chia seeds, and are packed full of plant-based goodness. And for those wondering, I promise, you can’t taste the beans!

 

 

Ingredients

1 cup sweet potato puree (approx. 1 small-medium sweet potato, baked and pureed)
1 cup oat flour (equivalent to 1 cup oats, blitzed into a flour)
½ cup almond meal
1 400g tin black beans, drained and rinsed
8 medjool dates, pits removed
½ cup raw cacao
¼ cup plant milk
¼ cup maple syrup
½ cup vegan chocolate chips, or 1 90g block of 70% dark chocolate.
¾ tsp salt
1tsp vanilla extract
1tsp baking powder
2tbsp chia seeds
Topping: small handful chocolate chips, nuts e.g. pecans

Instructions

  1. Preheat oven to 180°C.

  2. Soak the dates in boiling water for 10 minutes, then discard the water.

  3. In a food processor, add all ingredients except for the chia seeds and baking powder. Process until smooth. Note that this will not go super smooth like regular cake batter.

  4. Add the chia seeds and baking powder, and mix into the batter slowly (using a spoon if necessary).

  5. Pour/scoop the batter into a lined baking tray, and smooth with a spoon to even out. I used a 21x21cm tray.

  6. Sprinkle with a small handful of chocolate chips, and nuts.

  7. Bake for 30 mins, then set aside to cool.
